Here's how I got started...

I needed to lose weight and lower my cholesterol levels, so I started exercising. Trouble was, I was starting to get burned out, not looking forward to my workouts. I had also hit a plateau and that can be very frustrating!

Then one of my work buddies mentions "Healthy Chocolate". Well, I was skeptical, I didn't believe I could eat chocolate and lose weight. Then she asked me to try it for 1-month to see what would happen. One square, three times a day, 20-minutes before meals. Well, I figured I was stuck anyway, so why not. In just that first month, I noticed changes. I had more energy for my workouts, and I was actually looking forward to them again!

After the month was over I had lost 10 pounds. That was not the only change... I have found that I am more focused at work, I an able to handle stress better and I am happier (even the people at work have commented on that!). I also find that I'm actually SAVING money by supplying myself with Xocai Chocolate and not buying all the snack foods!

The Fruit That Fights the Flu

Buy yourself a bag of apples and munch away. The quercetin in apples may help bolster your immune system during vulnerable times. Apples (and red onions, broccoli, and tea) are great sources of quercetin - a flavonoid that may stave off the flu virus when the body is under stress. In a recent study, quercetin did just that: The normal dip in immunity that comes with physical fatigue was pretty much canceled out by the flavonoid. Quercetin could help power the body through both physical and psychological stress.

Old-Fashioned Apple-Nut Crisp

5 medium-large crisp, tart apples, such as McIntosh, Empire, Granny Smith or Cortland, peeled and thinly sliced (~6 cups)
3 Tbs granulated sugar
1 Tbs lemon juice
1 tsp ground cinnamon, divided
2/3 c. whole-wheat flour
1/2 c. old-fashioned rolled oats (not instant)
1/2 c. packed light brown sugar
2 Tbs butter, cut into small pieces
2 Tbs canola oil
2 Tbs frozen apple juice conc., thawed
1/3 c. chopped hazelnuts or walnuts

1. Preheat oven to 375°F. Coat an 8" square (or 2qt) deep baking dish with cooking spray.
2. Combine apples with granulated sugar, lemon juice & 1/2 tsp cinnamon in a large bowl. Toss to mix. Transfer to the prepared baking dish, cover with foil and bake for 30 minutes.
3. Meanwhile, combine flour, oats, brown sugar and the remaining 1/2 tsp cinnamon in a medium bowl. Using your fingers (or a fork or pastry blender), cut in butter until evenly distributed and there are no chunks. Stir in oil, apple juice concentrate and nuts; toss well until evenly moistened and clumpy.
4. Remove the foil from the baking dish and scatter the topping evenly over the apples. Bake uncovered until the topping has browned and bubbling, about 30 minutes more.
